Ingredients

1 OP Sweetheart ham

1 cup white wine

2 bunches flatleaf parsley picked and washed

2 garlic cloves, peeled and germed

¼ cup grated grana Padano

¼ cup toasted pistachios

Zest of 3 lemons

¾ cup olive oil

Salt to taste

Instructions
  1. With a sharp knife, make 8-10 crosswise cuts in the ham stopping before you cut all the way through the ham, so that it looks like an accordion.
  2. Combine the ham with the white wine in a small baking dish and bake in a 350 degree oven, covered, until the ham registers 140 degrees on an instant read thermometer (about 30 minutes).
  3. While the ham bakes, make the parsley sauce: Combine the pistachios, garlic, grana Padano, and lemon zest in a cuisinart and process 10 seconds. Scrape down the sides and add the parsley. Process 30 seconds. Scrape down the sides again and process, drizzling the oil in in a continuous stream until it is all incorporated. Season to taste with salt.
  4. When the ham is at the right temperature, remove from the oven and uncover. Spoon the parsley sauce into the cuts in the ham. Return the baking dish to the oven, uncovered, and bake until the sauce has warmed through (about 5 minutes).
