This salami is a true celebration of Oregon and an epic realization of the Olympia Provisions NW Farmers Network! Made with GAP4, pasture-raised Pork from Oregon family farms, Pinot Noir from the Willamette Valley, juniper, rosemary, and Jacobsen Sea Salt. 

We are proud to introduce The Olympia Provisions Farmers Network. For the last ten years, we’ve dreamt of consistently sourcing environmentally regenerative, humanely-raised pork from the Pacific Northwest. We aim to have a 100% small-farm-supported line of salami, sausage, and other tasty treats by 2024. This Network supports small family farmers who value regenerative agricultural practices, humane animal treatment, and doing things the natural way.   • Ingredients

    Pork, pork fat, wine, salt, Less than 2% dextrose, water, spices, garlic, swiss chard powder, juniper, rosemary, lactic acid starter culture. Hog casing.

  • Storage & Preparation

    Salami keeps best when refrigerated. Store paper wrapped salami in a plastic bag or sealed plastic container in your refrigerator’s crisper drawer. Serve at room temperature, sliced as thick as you desire.

The OP Farmer's Network

We began as Oregon’s first USDA-certified salumeria. Now, we are creating a northwest network of farmers who focus on holistic land management and pasture-raised hogs. Salumist and owner, Elias Cairo, grew up growing his own food. After ten years of making charcuterie, Eli saw how broken our food supply chain has become. Eli got to work with our co-founder (and sister), Michelle, to create a business model that benefits everyone in the supply chain. Our pigs come from small, Pacific Northwest family farms. They use regenerative methods to raise happy hogs and help curb climate change. Each pig is, of course, antibiotic and hormone-free. But, they also spend the majority of their lives outside in open pastures and are never modified. This network shares information on how to manage and grow their farms to benefit our environment. A small, sustainable and humane approach to farming, with a focus on leaving the world a better place, will always produce the best quality.

How to Enjoy it

Slice thin, on a bias, and pair with local, seasonal produce, a soft-rind cheese, toasted almonds and delicious Oregon tinned fish (like from our friends at Tiny Fish Co.).

Leave the casing on or peel it off - it's all natural and totally edible. To each their own!
