Olympia Provisions began as Oregon’s first USDA-certified salumeria. From production to customer service we are a passionate group, excited about food and solution-oriented about everyday systems A pleasant work life is paramount and we aim to create that for one another on a daily basis.

ProductionThe Meat Shop is the backbone/engine/kingpin/heart of the company. Our dedicated group of butchers, cutters, stuffers, harvesters, packers, and pickers all work as a collaborative team to craft, cure, package, and deliver the best charcuterie on the planet.
Restaurants and WurstsThe restaurants reflect an innovative approach to the traditions of rustic Spanish and Mediterranean cooking. In combining European culinary methods with the clean, bold flavors of the Pacific Northwest, our dishes highlight locally-sourced meats and seasonal vegetables while our service invokes a rustic, comfortable vibe.
Farmer's Markets and Hot Dog Carts
There’s nothing better than foraging produce, fish, charcuterie, and cheese at Farmers Markets in the Pacific Northwest. Well, bird hunting is better, but I digress.
We craft the best charcuterie on the planet and we have a dedicated team of passionate Associates to help make our meats available to shoppers and passersby.
