A note on our wine program from Jess:

The wines found on in our wine programs are chosen for their quality and impeccable match to our charcuterie and cuisine. They are from producers that make wine in ways we want to support - they are stewards of the land, making wines in the manner that generations did before them: without chemicals and inputs, without modification or manipulation. They are sustainable, biodynamic, and/or organic, and are made in the most natural methods possible. Nearly all undergo wild yeast fermentation and express terroir in its truest form. They are from talented farmers and families with an unmatched passion to keep the joyous tradition of wine alive. Most are made in such small quantities we are fortunate to see them in our hands. I hope you enjoy these gems of the wine world as much as we do.

Avinyo Brut Reserva Cava | Macabeu, Xarel-lo, and Parellada | Spain $20

Planted in the 15th century, Avinyo is a prodigious and loved producer of Cava from Penedes, north of Barcelona. Using Parallada, Xarello and Macabeo, this cava is made using the Méthode Champenoise. Aged 24 months in bottle on the lees, this is an easy dupe for champagne with a plush, soft mouthfeel, and rich stone fruit and apple flavors with a mineral zip on the back end. Unsurprising, as I myself often say that Xarello is Chardonnay for people with a sense of adventure. Cava gets a bad rap for being cheap  bulk quality sparkling, but like all wines with a reputation, in the right hands it is nuanced and delicious.

Casa Belfi Prosecco Col Fondo Frizzante | Glera | Italy $28

A hazy bottle fermented prosecco that is as light and brisk as it is cloudy and delicious. Imagine prosecco before the modern invention of stainless tanks, harsh filtration, and "tutti frutti" styles. This will take you there!

Meinklang Frizzante Rosé | Pinot Noir | Austria $22

Meinklang is simply awe-inspiring. Located in the Burgenland region of Austria, it is more than just a winery. They are a fully functioning organic and biodynamic farm. In their words "this farm functions much like an organism, relying not only on the people but also on the local herd of cows which contributes in an essential way with their natural and invaluable fertilizer. The farm’s diversity is enriched by ancient grains such as spelt, farro, and einkorn wheat, as well as the fruit orchards and vegetable gardens, meadows of wild herbs and flowers, and the elegant charm of the grapevines." Today the winery is run by the family including all three sons who opted out of professional careers to remain in the family business. This 100% pinot noir sparkling rosé is made in the traditional petillant-naturel method (aka Pet Nat) and is luscious and refreshing with notes of ripe strawberry, white raspberry, and spring blossoms. Perfect with fresh cheese, spring vegetables, fish, and sunshine.

Billecart Salmon Brut Reserve Champagne | Pinot Meunier, Chardonnay, Pinot Noir | France $37 (375ml half bottle)

Life hasn't stopped, it's just different. Birthdays still take place, anniversaries come and go, babies are born each day, and many of us still have much to grateful for. When you're craving something extra special be it for a celebration or just a mood enhancer, a half bottle of champagne will always do the trick. Billecart is our go to and for good reason - it's simply one of the best.

Day Wines "Mamacita" Pet-Nat | Malvasia Blanca, Muscat | Oregon 2019 $31

"The 2019 vintage of everyone's favorite Mama is composed of 57% Malvasia Bianca from Herb Quady's Mae's Vineyard and 43% Early Muscat from Layne Vineyard. Our two most important growers in Applegate Valley really hit the mark with their fruit in 2019, and the resulting wine shows exactly why we prize these vineyards so highly. All the classic character is on full display – highly aromatic key lime and lemon feature on the nose, with background floral notes of jasmine and verbena. The palate is bright, racy, and full of vibrant citrus and super-fine mousse. There's even a slightly exotic touch of cardamom and saffron on the surprisingly long finish." - Day Wines

Denny Bini Lambrusco dell'Emilia Italy $20

Lambrusco has a long traditional on the table with delicious charcuterie such as mortadella and proscuitto but got a bad wrap when a sea of low quality lambrusco dominated the market. Things are changing and producers have turned their eyes to quality both in their farming practices and in the cellar. This is a dense style of lambrusco with a deep red hue, fine tannins, and notes of amarena cherry, raspberry, and turned earth.
