Alongside our signature Rosette d'Oregon, you'll get to sample 3 single origin salamis - one from each of our esteemed framers: Deck Family Farms, Malheur River Meats and California Heritage. We've seasoned these 3 salamis with just salt, but boy do they taste different! Because these pigs were raised on different pastures, they each bring a new flavor profile.

    Salami keeps best when refrigerated. Store paper wrapped salami in a plastic bag or sealed plastic container in your refrigerator’s crisper drawer. Serve at room temperature, sliced as thick as you desire.

Experience the rich, savory flavors of our salami trio, made from hogs raised using regenerative practices. Our hogs are raised on a diverse mix of pasture, allowing them to roam and forage freely. This results in meat that is not only delicious, but also more sustainable and humane.

Our salami sampler includes our most popular flavor, the Rosette d'Oregon, plus two Saucissons finished simply with salt, one from each of our Farmer's Network Farms. This way, you can taste the difference in terroir from hogs raised on pasture in the Willamette Valley versus Eastern Oregon in the Malheur River. All are carefully crafted using traditional curing methods and the finest ingredients. From mild and delicate to savory and bold, there's something for every palate in this sampler.

How to Enjoy

Pair the saucissons with a dry white wine, such as a Sauvignon Blanc or Pinot Grigio, and a sharp, tangy cheese like a goat cheese or a Comté.
