Beurer Trocken | Riesling | Germany 2018 $22

"Here’s the hypothesis we’ll set out to prove: Jochen Beurer may be one of the most important winemakers in Germany. An ex-European BMX champion - his wines are pure energy; they have a universal vibration to them. They seemingly do not follow the laws of physics that govern the rest of the conventional wine world. They float. Among winemakers in Germany, Beurer is revered and his whites and reds are nearly always considered among the greats. Few winemakers are able to achieve such thrust and such purity, from the simpler Trollinger and Portugieser up to Grauburgunder, Sauvignon Blanc and, yes, Riesling. Yet Beurer’s influence flows not only through his wines, but through his actions. Jochen is one of the deepest thinkers about the environment beyond the vineyards. A tour with Beurer is as likely to include a discussion of his bees, the vegetation and animals surrounding the vineyards as it is to include a discussion of the soil and vines themselves. Remstal (where Beurer is located) is the only area in Germany with Zweigelt!"-Vom Boden (importer)

Weingut Brand "Wildersatz", Pfalz | Kerner, Silvaner, Muller-Thurgau, Chardonnay, Weissburgunder, Riesling, Auxerrois | Germany 2018 $28

The cherubic, young Bacchus found on the front of this wine was drawn by Daniel & Jonas' grandmother. It delineates this series of their wines from others in that they are 100% sulfur free. This is natural wine at its most natural. This wild field blend is salty and tart with notes of granny  smith apple skin, white blossoms, and citrus zest. It's a cloudy straw yellow color with just touch of spritz to keep it fresh and alive. This wine is dynamic and wonderful, perfect for a warm summer day with some fresh cheese.

Gorrondona Bizkaiko Txakolina | Hondaribbi blend | Spain 2018 $22

Doniene Gorrondona is perched on precipitous green cliffs above the Bay of Biscay in the seaside village of Bakio, near Bilbao in the Spanish Basque Country. The name of the winery is a combination of "Doniene," Basque for "Saint John," the patron Saint of Bakio whose shrine and hermitage is on the summit of the nearby San Juan de Gaztelugatxe island, and Gorrondona is the name of the farmhouse and winery which was built in 1852. This txakoli isn't the effervescent style many are familiar with, but it does have all of the delicate salty delight and freshness that is perfect for sunny days. Recommended for those who like very dry bright rights such as sauvignon blanc, pinot grigio, and muscadet.

Lucien Crochet Sancerre | Sauvignon Blanc | France 2017 $38

Sancerre holds a most dear space in my heart. Every time I have good Sancerre in my glass I feel spring time coarse through my veins - the excitement of spring vegetables and grilled trout, the anticipation of summer sun, the eagerness for the world reawakening after our winter slumber. With its lively acidity, its tart fresh flavors, and its subtle under tone of wet stones I can think of no better wine to ring in the arrival of spring sunshine.

*NEW!* Vincent Chardonnay | Chardonnay | Oregon 2018 $23

This is a lot of high quality Oregon chardonnay at a very good price. None of that oak butter caramel flavors that scares me away, just purity, finesse, and deliciousness.

A note on our wine program from Jess:

The wines found on in our wine programs are chosen for their quality and impeccable match to our charcuterie and cuisine. They are from producers that make wine in ways we want to support - they are stewards of the land, making wines in the manner that generations did before them: without chemicals and inputs, without modification or manipulation. They are sustainable, biodynamic, and/or organic, and are made in the most natural methods possible. Nearly all undergo wild yeast fermentation and express terroir in its truest form. They are from talented farmers and families with an unmatched passion to keep the joyous tradition of wine alive. Most are made in such small quantities we are fortunate to see them in our hands. I hope you enjoy these gems of the wine world as much as we do.
