Billecart Salmon Brut Reserve Champagne | Pinot Meunier, Chardonnay, Pinot Noir | France $37 (375ml half bottle)
Life hasn't stopped, it's just different. Birthdays still take place, anniversaries come and go, babies are born each day, and many of us still have much to grateful for. When you're craving something extra special be it for a celebration or just a mood enhancer, a half bottle of champagne will always do the trick. Billecart is our go to and for good reason - it's simply one of the best.
Patrice Colin Perles Grises Brut Rosé | Pineau d'Aunis | Loire, France $21
This sparkling rosé is made from a native French grape variety called Pineau d'Aunis and has long been one of our guest favorites in our restaurants. It's delicate and very dry with a subtly smokey, notes of cranberry, and summer strawberry. Delightful!
Art + Science Pet-Nat Rosé | pinot noir | Willamette Valley $22
Made in the old school method of finishing fermentation in the bottle trap the natural effervescence, this local sparkling wine is dense, slightly funky, and delicious.
Casa Belfi "Frizzante" | Glera | Italy $27
Before Prosecco had a name for itself in wine stores, on grocery shelves, and at restaurants it existed in a very different form... This is Prosecco as it's most old school self. Cloudy and hazy in color, low in alcohol, with a delicate and textural bubble that takes over your mouth. Notes of peach, white grapefruit, and end of summer hay.
Paltrinieri "Solco" Lambrusco dell'Emilia Italy $20
Lambrusco has a long traditional on the table with delicious charcuterie such as mortadella and proscuitto but got a bad wrap when a sea of low quality lambrusco dominated the market. Things are changing and producers have turned their eyes to quality both in their farming practices and in the cellar. This is a dense style of lambrusco with a deep red hue, fine tannins, and notes of amarena cherry, raspberry, and turned earth.
A note on our wine program from Jess:
The wines found on in our wine programs are chosen for their quality and impeccable match to our charcuterie and cuisine. They are from producers that make wine in ways we want to support - they are stewards of the land, making wines in the manner that generations did before them: without chemicals and inputs, without modification or manipulation. They are sustainable, biodynamic, and/or organic, and are made in the most natural methods possible. Nearly all undergo wild yeast fermentation and express terroir in its truest form. They are from talented farmers and families with an unmatched passion to keep the joyous tradition of wine alive. Most are made in such small quantities we are fortunate to see them in our hands. I hope you enjoy these gems of the wine world as much as we do.
