Pasture Raised Bouquet

$86.00 Regular Price

If you love the land and your sweetheart this is the perfect gift!!!  This is an exclusive sampling of our best salamis made with pasture-raised, GAP certified pork from our Farmers Network in the northwest made into a bouquet!   These amazing farmers raise the best pigs, on pasture for us, and create the absolute BEST quality salamis we've ever made.

Alongside our signature Rosette d'Oregon, you'll get to sample 3 single origin salamis - one from each of our esteemed framers: Deck Family Farms, Malheur River Meats and California Heritage. We've seasoned these 3 salamis with just salt, but boy do they taste different! Because these pigs were raised on different pastures, they each bring a new flavor profile.

Our Farmer's Network

Experience the rich, savory flavors of our salami trio, made from hogs raised using regenerative practices. Our hogs are raised on a diverse mix of pasture, allowing them to roam and forage freely. This results in meat that is not only delicious, but also more sustainable and humane.

Our salami sampler includes our most popular flavor, the Rosette d'Oregon, plus two Saucissons finished simply with salt, one from each of our Farmer's Network Farms. This way, you can taste the difference in terroir from hogs raised on pasture in the Willamette Valley versus Eastern Oregon in the Malheur River. All are carefully crafted using traditional curing methods and the finest ingredients. From mild and delicate to savory and bold, there's something for every palate in this sampler.

How to Enjoy

Pair the saucissons with a dry white wine, such as a Sauvignon Blanc or Pinot Grigio, and a sharp, tangy cheese like a goat cheese or a Comté. The sharpness of the cheese will complement the rich, savory flavor of the salami, while the acidity of the wine will help to cut through the fat and refresh the palate.

Pair the Rosette d'Oregon with a crisp, refreshing salad made with bitter greens like arugula or radicchio. The bitterness of the greens will help to balance the richness of the salami, and the crunchy texture will provide a nice contrast.

You could also pair the full sampler with a crusty bread or a hearty grain like farro or quinoa. The bread or grain will provide a sturdy base for the salami, and the complex flavors of the salami will be enhanced by the nutty, earthy flavors of the grain. Add a pickled onion and some mustard, and you're in hog heaven.
