Chef De Cusine - Division
This is a great opportunity for an experienced Kitchen Manager or a hungry Sous Chef ready to take the step to the next level. You will be responsible for the day-to-day operations of our collaborative kitchen, working closely with our General Manager and Culinary Director. Although there is a significant administrative component to this role, this is a working Chef position and you will be on the line every shift.
Our BUSY Public House Kitchen is inspired by the pub fare of Switzerland, and feels like a neighborhood pub that you would walk into in an Alpine town. We: believe simple is better, prefer tradition over trend, support local farms and producers first, support sustainability and eliminate waste through whole animal utilization, set standards and hold each other accountable. You: are experienced and empathetic manager, are obsessed with cleanliness and organization, are a passionate food service professional, are reliable and punctual, lead by example, communicate effectively and believe the FOH is an integral part of your team.
Duties:

Prepare and cook food; Alpine-focused high-end pub fare

Purchase and Schedule to budgets

Place orders and maintain inventory

Lead the line from the line during busy services and communicate effectively with the entire restaurant team

Diligence with established sanitation standards, personal hygiene, and health standards

Observe proper food preparation and handling techniques

Collaborate with Culinary Director on seasonal menu changes and specials
Required Skills and Experience:

Culinary Degree preferred

3+ years of experience on the line with demonstrated management ability, including recipe costing and writing

Excellent technical skills and knowledge of BOH best practices

Ability to align to organizational culture and goals of providing stellar customer experiences

Work Environment:
The majority of this work is performed inside a hot & humid kitchen. While performing the duties of this job, the employee is frequently exposed to fumes or airborne particles, moving mechanical parts and vibration. The floors can be slippery. The noise level in the work environment can be loud.
Physical Demands:
The employee is required to routinely sit, climb, balance, stoop, reach, twist, kneel, crouch, crawl and/or use your body in an agile manner. The employee must frequently lift and/or move up to 25 pounds and occasionally lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.
